It is a small cone-shaped muscle lying just beneath the triceps brachii, as well as under and to the posterior edge of the scapula/blade bone. The muscle fibers run parallel to the long axis of this muscle. This muscle can have some connective tissue on the external side. Common Names: Bistro Tender, Shoulder Petite Tender Roast, Shoulder Tender. Product is trimmed to the silver, flake fat allowed.
