Tripas, a.k.a. chitterlings, are perfect for tacos when cleaned and boiled then fried or grilled. Beef Tripas (small intestine) is a convoluted tube, excluding the distal ileum to the ilea caecal valve where it terminates into the large intestine. Average fat thickness should be no more than ¼ inch thick.
