Excel's 0x1 Strip Loins are the trimmed portion of the Primal Flat Cut Loin remaining after the tenderloin, flap meat and sirloin butt portion of the wing and all bones have been removed. External fat is trimmed to 1/4 inch. Each strip loin is cut in half.
