Excel's Ball Tip is a trimmed portion of the knuckle muscles consisting of the quadriceps muscles from the posterior end of the bottom sirloin butt. Surface fat to be trimmed to the silver. Excel's beef sirloin ball tips are trimmed further than most cuts to reduce shrinkage during cooking for better portion control. It also means kitchen staff do not need to trim the meat, allowing prep by less-skilled employees.
