EXCEL Bone-In Blade 1x1 consists of a bone-in blade section with the neck meat and shoulder clod removed. It is produced from a primal chuck. The neck is removed from the blade section between the 4th and 5th cervical vertebrae from the atlas bone end of the blade. Fat trimmed to 1/4 inch.
